What is the best time of day to weed the vegetable garden?

Early in the morning.
When the plants are hot, they are more susceptible to damage from being moved around.
Of course this doesn't matter with the weeds, but it's a shame when you accidentally ruin something that has been growing for months.
 
I'd weed when the sun is not beating down on me. Probably morning because the ground may still be damp from watering. Well, I water at night.
 
weed only when it will be cool outside because those are shading the earth from the heat of the sun....but if you have a mosquito problem....in the morning would be better than afternoon....but water right after you pull them....it's also cooler outside on those times of the days so you wont be so hot......DO NOT water in the evening or right before or in the heat of the day or you might burn your leaves....if you lay your hose donwn or let the water trickle underneath the plant (which prevent snakes too) then its easier on the entire plant....but NEVER water near night time or it will promote diseases....

Makes no difference if you remove the weeds. If you tend to just pull them up, do it in the morning and they will dry out and be dead by the end of the day if warm-- unless bermuda. That takes several days to kill off. Once the weeds are dried out though, can turn around and use as mulch to help keep down other weeds.
