What is the best mountain for an average hiker to hike in North America?

I am trying to plan a trip next spring to hike a mountain with my girlfriend. I was hoping for two week vacation. Any suggestions would be helpful, I'm open to all states within the lower 48. No climbing, just hiking and some scrambling is okay.
