What is the best hardtail mountain bike for under $500?

I have a 10 year old Schwin Mesa hardtail 21 speed with Rock Shox and the 'V' brakes. It is a good bike but I would like to upgrade to something newer. I have my eye on something with 24 to 27 speeds and perhaps disc brakes (are they that much better than 'V' brakes?). I ride single track, cross country type stuff. I am 5'10" and weigh 185. I have been looking at the Trek 3900, 4700 and the Specialized Hardrock. Let me know which bike I should go after and what kind of experieces you have had. Thanks.
 
They are nice bikes, I don't think you can go wrong with any of them. You may want to take a look at the Forge Sawback 5XX that go for $400 with disk brakes.
