What is better...sit down or buffet dinner? (destination wedding)?

We are planning on getting married on the beach, then taking our guest to either a sit down restaurant or an awesome buffet. The buffet is crab legs & steak (170 item buffet) all you can eat $30 a person. (that includes non-alcoholic drinks & tip figured in) But a sit down restaurant we can pay more like $15 a person, drinks & tip not included in that $15.

We wanted to have something super personal that is the point of the destination wedding. Is everyone getting up & going to get food several times going to be much for our big day?

Either place that we go we are going to pay for 1 round of alcoholic drinks at the restaurant. Anything after that the guest will have to pay for. There will be cake & all they can drinks at the hotel when we return. We are also having a trolly so no one will have to worry about drinking & driving.
This is our last thing to plan.
We will have about 20-25 people at our wedding & out to eat counting the bride & groom!
The whole reason of 1 drink is because my father will order 2 beers at once. & he doesn't drink cheap beer. Last time we took my parents to dinner my father had $31 in alcohol just himself. He will have no problem doing the same & encouraging others also. I'm trying to keep him sober for at least half my wedding! His family does not like to drink or like people who do.
There will be all they can drink back at the hotel. (beer & some specially shots) We are paying beer dissipator prices for the beer at the hotel, not bar prices! ($15 a case not $3+ a beer)
YES THIS WILL BE A PUBLIC RESTAURANT NOT JUST A BALL ROOM ALL TO OURSELVES. WE WILL ALL BE IN FORMAL WEAR THE PUBLIC IN JEANS & A T-SHIRT.
