What is a vegetarian/vegan diet good for the environment?

Ones that don't include leafy vegetables and legumes.
My environment becomes quite unpleasant a couple of hours after consuming those. Well for other's it does!
 
Just one example:
To "produce" one portion of beef takes ten portions of just as good vegan/vegetarian food. Plus energy to keep them and buildings to house them in cold weather...

I put it that simply, because you said 'What' instead of 'Why' and I have assumed you have trouble with words.
 
Eating animals requires that they are fed. When animals eat grains, etc, they are using resources, land etc, require chemicals to treat the feed, etc and use incredible amounts of energy to sustain the animal. Also, as you can imagine, there is waste from the animal while it is living, methane gases and other wonderful things that come from the animal. Basically, it takes 100 x more energy to eat a steak than it does to eat a salad, or some beans or other veggies.

Good question that I didnt answer completely, but you get the idea. I'm sure someone else will give you more accurate information.
 
To be vegetarian/vegan means destroying the exactly things (creatures, plants) that create oxygen. Now, which of these diets could be so good for environment? I don't know...
 
The livestock industry contributes 19% or more to the total amount of greenhouse gases produced in the world which is more than the entire transportation industry.

The contributors are:
1) Massive deforestation for livestock grazing
2) Believe it or not, cows significantly outnumber humans and in the process of digestion they produce a significant amount of methane which stays in the atmosphere for less time but is a many times more potent greenhouse gas than Carbon dioxide.
3) Transportation, processing, and refrigeration of meats.

Also...

Sewage from livestock farms is many times funneled directly into rivers and streams causing a great deal of pollution.

As somebody already mentioned it takes significantly more water to produce a pound of beef than it does an equivalent amount of vegetables.
