What is a healthy eating diet? Is my diet "Healthy enough"?

My diet is mostly home cooked meals with an occasional restaurant meal. My diet is mostly...
For Breakfast I either have 2 Eggs mixed with milk (Toast) or more often I have Pancakes (With Syrup)
I don't eat lunch because School lunch is all "fake" and VERY unhealthy (not to mention utterly gross)
I mean the pizza is made of a fake sauce, fake cheese, and fake dough and contains on average 2750 calories, based on their "health chart" (I agree, "What???")
But if I don't have school my lunch would most likely be a sandwich (Ham, Salami, Turkey) or grilled cheese.
For dinner I usually have Rice and Beans (Puerto Rican styled!) with Pork chops, Steak, or Chicken
Sometimes I have various pasta, usually with red sauce and meat (I eat a lot of meat by the way)
Mashed Potatoes (Again usually with meat)
If we ever have fresh fruit or vegetables I try to eat them as munchies/desserts but that's a "rare" occasion (my parents don't often buy fruits/veggies and I don't usually have the money too either)
I also take a One a Day Mens vitamin pill. I rarely eat junk food, or at least its a rarity compared to how others eat it... My drinks are usually Water, Orange Juice, Minutemaid Juices, and once awhile Dr. Pepper.
Is this diet healthy enough (doubt it) or do I need changing up? Where do I need to add? What do I have to take out? Thanks for reading my utterly long paragraph!
