what is a good Fish and Chips recipe ?

ever since i went to the west edmonton mall jungle jim's restaurant i would never stop talking about their fish and chips ..they were YUMMY! and so far the best one i ever had ;)
anyways does anyone know a good fish and chip recipe that kinda relates to the ones at jungle jim's?

use fresh ingredients... fish and potatoes.
