Major in some kind of field science and minor in journalism (they will teach you photography too) and work for the school newspaper while in school
Then work for an animal theme park or zoo as an assistant photographer for a few years to learn how to stalk all the various animals you plan to shoot, including building blinds. While working for them, start buying all the equipment you need to be a wildlife shooter.
