What does the sun on a koi fish's forehead symbolize in tattoos?

I've seen a lot of koi tattoos with a sun-like circle on the fish's head. Does it have to do with the wisdom that comes with age, or... something entirely different? Also, is there any significance placed in koi fish colors when used in tattoos?
