Smoke! If there's no smoke coming out of the back of the joint, keep driving! So many places call themselves BBQ joints and grill, broil, bake or even OMG the horror boil their meats. If you want good BBQ find a place with an old smoker out back and sauce on the table. Don't go to a place that drowns your pig in sauce before it comes to your table. They're just trying to cover up the lack of flavor and tenderness.
