What do you consider to be the best avant garde new food combination?

I may be behind the times, things change constantly and I've been out of the culinary industry for about 3 years. I hear all the time that certain things are outdated.. escargot.. chicken parm.. caesar salad.. etc. It seems cooking and fashion have more in common than one would think. What are your favourite new and interesting creations?

My humble opinion.. blueberry/balsamic.. melon/cured ham.. and duck/cherry. I know they're not revolutionary but I'm from a small town and all three combinations have blown my mind in the past ten years.
