What are these bikes called, the one with super slim tires and tire rims?

I am searching online, for bikes, with the super slim tires, as they are very fast.
But what are these called?
I thought these are called "road bikes", but when I search for road bikes, I see bikes with normal sized tires and tire rim.

--> Also are these slim tire bikes very bad and unstable on even slight mud and gravel?
 
They are known as road bikes or road racing bikes. Road bikes can be anything ridden on the road but most people know they mean racing bikes or ten speed bikes.

Road bikes are not very good on gravel or muddy roads. Hybrid bikes have the same size wheel but the tires are wider and can be used on gravel road and trails.
 
There are different levels of road bikes, but they have the slimmest tires. Touring versions will have wider tires as they might go off road (but not singletrack style dirt trails) and hybrid bikes are halfway between mountain & road as far as tire width.

Road bikes with their thin tires are worthless on any dirt trail beyond a smooth hard-packed trail. Mud needs wider tires for stability & control. They're meant for pavement (smooth) but don't handle potholes well.

They are meant for speed.
 
Yes, road bikes have the slimmest tires. They should have 700c x 23 tires, which is the standard size these days. There's no point in going any slimmer.

A little mud or gravel isn't going to hurt. If you were going to encounter more gravel roads, I would try 700c x 25 tires, which fit on most road bikes as well. The stability of the bike depends on a lot of factors, including handling due to the geometry of the bike. Road bikes can be pretty versatile- most companies have models that are designed to be more stable for longer, rougher rides.
