What are the rules in the NFL for quarterbacks making contact with other players?

Let's say that you're the quarterback and fake a hand off to the running back but start running it yourself down the right sideline. A safety approaches you as you are carrying the football. Are you allowed to knock the safety aside with your left hand and keep running (assuming this is even physically possible for you to do). I never have seen this done. The quarterback never seems to want to engage the safety and would rather just take the ball out of bounds (Vince Young) or take it an extra yard or two before being tackled (Michael Vick).

Another scenario: If you're the quarterback and still have the ball in the pocket and a defensive player (let's say a cornerback) gets through the offensive line and is coming at you. Are you allowed to go helmet-to-helmet at that player and basically run him over with no penalty? If so, does this change if you don't have the ball and the cornerback is about a second away from tackling you as well?
