here are a few recipes i came across that we really like......
Crawfish Linguine
INGREDIENTS....
1 (8 ounce) package linguine pasta
1/2 cup butter
1/4 cup olive oil
1 clove garlic, crushed
1 cup sliced mushrooms
1 pound crawfish tails
1/2 cup chopped green onions
1 cup half-and-half cream
1/3 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
salt and pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
Melt butter with olive oil in a large skillet over medium heat. Saute garlic and mushrooms until tender. Stir in crawfish and green onions; reduce heat to low, and cook 5 minutes. Stir in half and half, Parmesan cheese, and parsley. Simmer for 5 minutes. Season with salt and pepper, and serve over hot linguine.
Crawfish Etouffee
INGREDIENTS.....
4 tablespoons vegetable oil
1/2 cup butter
2 bunches green onion, chopped
1 large onion, diced
1/4 cup chopped green bell pepper
2 stalks celery, chopped
1 pound crawfish, peeled
1 teaspoon tomato paste
1 (14.5 ounce) can chicken broth
2 tablespoons cornstarch
1 tablespoon water
DIRECTIONS
Heat oil and butter in a large skillet over medium high heat. Stir in onion, green onion, green pepper and celery; cook until transparent. Mix in crawfish and tomato paste; cook for 10 minutes.
Pour chicken broth into skillet. In a small bowl, dissolve cornstarch in water. Stir dissolved cornstarch into crawfish mixture and cook until thickened, about 35 minutes.
