What are some easy camping recipes?

Baggy Omelets

2 lg eggs
sausage, bacon, or ham
any of your favorite omelet veggies
shredded cheddar cheese
salt and pepper to taste

Crack eggs in a ziplock bag. Add shredded cheese. Add meat and veggies salt and pepper to taste. Put baggy in a pot of boiling water for about 5 to 10 min. Then just cut bag off and enjoy!

Hints:
You can make a western omelet with sausage, cheese and bell peppers, just add salsa.
Or just veggie omelets or ham and cheese... Just have fun!!

These are great and they come out just like a real omelet.
You can make up a lot of these before hand and just throw them in the water when you wish.

Po-to-ham
:
POtatoes, TOmatoes, HAMburger

(actually the tomato is a ziploc bag of Ragu or whatever you like)
onion,
salt,
pepper,
basil flakes

Boil potatoes, two to three per person,
like the red with skin left on, cut into smaller chunks.

In separate pan fry
1 to 1 1/2 pounds ground beef with
large onion, salt and pepper to taste.

Drain if necessary.

In the big pot, after draining potatoes add tomato sauce (thinned as desired), basil flakes, hamburger and onions.
Heat till simmering.

Variations/Hints:
I like sweet and hot so will add brown sugar and ground red pepper. Have also tried green pepper.

Comments:
A hearty meal with simple ingredients that travel well.


Dutch Oven Frito Pie Recipe

2 lbs of ground beef
2 small onions, diced
1 15-ounce can of tomato sauce
1 can each of kidney beans, black beans & corn
1 green pepper diced
1 bag of Fritos
1 bag of shredded cheese (taco flavor is good!)
cumin, salt, pepper, garlic salt, chili powder to taste
sour cream (optional)
lettuce (optional)

Dutch Oven directions,
brown ground beef with onions and salt and pepper.
When cooking is completed, drain beef.

Spread a generous layer of Fritos on the bottom of the Dutch Oven, reserving some for later.
Top the Frito layer with drained beef. In a separate bowl, stir together the tomato sauce, beans, corn and green pepper.
Add spices to taste.

Pour mix over beef layer.

Cook for approximately 35-45 minutes at 350 degrees.

Sprinkle a layer of cheese on top during the last 5 minutes of cooking.

Before serving, in each individual's dinner bowl, sprinkle some Frito's.

Scoop dinner out of Dutch Oven and place on top.

Finish off with some sour cream, lettuce and extra cheese.

Variations/Hints:
Feeds about 8 hungry people.

Comments:
This is a great recipe when you are super hungry after a long day.
 
A camping Classic:
Shepard's Pie
1 lb Ground Hamburger
1 can of corn--DRAINED
1 can of peas--DRAINED
OR a bag of frozen veggies corn, carrots, etc. THAWED
1 can cream of mushroom soup
1 Mashed potato's (make some instant ones)
Shredded Cheese (I like Cheddar)
Directions:
1. Brown meat over medium heat(little Salt and Pepper) and drain fat
2. Add soup to meat and heat(LOW) a couple minutes
3. Put meat/soup mix with veggies in casserole dish or DUTCH OVEN and Mix.
4. Spread mashed potato's over mixture(I use 2 batches...we like 'em)
5. Sprinkle cheese over top.
6. Bake for 45 min at 350 degrees(mine was done a little early once...35 min)
Add some bread and butter and you are STUFFED!! The kids like using rolls and fill them up...

Another easy one is putting some Chunky Campbell's soup(Sirloin Burger is awesome) over Egg noodles.

Try this NO CLEAN UP breakfast:
Take a small ziplock FREEZER bag.
ADD-- 2 eggs, break-up 2 slices of pre-cooked bacon OR sausage(I use both...LOL), and some shredded cheese.
Mix it all up in the bag.
YOU MUST GET EXCESS AIR OUT!!!
Put it in a pot of BOILING water for 4-5 minutes(easy to take out and check often).
You can eat it right out of the bag or you COULD use a spork if necessary. The kids love making their own...

take 2 pieces of bread, put butter on the outside, the spread pizza sauce on both pieces, then put shredded cheese, and things like pepperoni, mushroom, green pepper, etc. then put in pan over fire and flip until golden brown on both sides then its done!
 
Grilled PBJs

Make peanut butter and jelly sandwich. Melt margarine in a skillet and brown each side of the sandwich until golden brown. It is sooo good and gooey. With a cold glass of milk it is great. It is also good for any time of the day.
