What and when to eat food for long distance biking?

I bike 200-400 miles a week, I'm not in a team yet nor am I a professional rider, while I train like one because hopefully one day I'll be one. I find myself not eating what I should be eating what and when I should be and it's hard to find a nice guide online.
If I'm biking 100 miles every 1-3 days, I need the right diet. Usually I just have cereal(sugary kinds like apple jacks etc) and an apple before I go on these rides, and I find it hard to bring food that will last, and wind up bringing a banana, and some energy gel pack things, and I know its not nearly enough when I'm burning 4000-6000 calories everyday.
What should I eat for breakfast, during my ride, and after my ride? What %'s of protein to carbs to fat should I have?
Today I ate around 3200 calories, and i burned around 3500, my caloric needs are around 2400, so I'm at a 1,100 deficit, and I know that's bad
