We're having shroves for dinner

When the girls were very young they thought these pancakes were "shroves"
because we had them for dinner on Shrove Tuesday.

MRS OLSON'S NORWEGIAN PANCAKES

4 eggs
4 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon cardamom
1 cup milk
1/2 cup sour cream
1 1/2 cups flour

Add liquids to dry ingredients and beat well. Bake quickly at 400 on an
electric griddle.

I'll be serving these with bacon AND sausage because my BFF Margie decreed
that on Shrove Tuesday you could have BOTH and as many as you wanted. We'll
top these with melted Plugra and perhaps some Grade B maple syrup. In days
of yore we had lingonberry syrup.

Oh, cardamom... yum! I have everything I need for that on hand!
Maybe I'll make those instead of cornmeal. Lingonberry syrup sounds
way yummy too. I may have some lingonberry jam in the cupboard, no
syrup though. Thanks for the recipe.

Hope you enjoy them, These are very thin, by the way, so you can have stacks
of them. About that lingonberry jam: perhaps you could use that instead of
syrup, or perhaps you could blenderize it into syrup.
