We're all adults here right? Can we politely discuss race relations anymore?

First off, I am of Irish descent, and there is a stereotype about Irishmen being drunks. I must admit, for the most part it's true. Like it or not. And most of those complaining about the stereotype see the truth within it and simply don't want to come face to face with it.
Similarly, I see other people called animal names. And I simply laugh, because animals are animals and people are people right? But I hear people get VERY upset about being compared to certain animals.
Much like my initial analogy, it almost seems they are projecting and somehow see traits of themselves in the animal maybe? I don't get it. Why the hatred over an animal name? If it's untrue we all laugh at the joke, only if it has some ring of truth do we mind it. Same as anything that is annoying, pure fluff can be overlooked but the truth hits hard.
So, why such animosity by certain people over being called animal names? If it's totally untrue, we all laugh, but if it holds some truth, well then what's wrong with pointing out the obvious? I don't get it...
