weddings buffets .... ideas please?

I am looking at a low budget wedding so will be doing the catering between the family. I am not sure what time we would be having our ceremony - i am thinking maybe 3pm. we will then go for drinks before having the food. if we were to eat at say 5-6ish would it just be best to do one large buffet with a mixture of hot and cold selections or do a hot buffet followed by a cold buffet at 8,30-9ish

hot buffet idea
lamb with minted new potatoes and roasted veg
salmon or pepper puff pastry with Mediterranean veg and potatoes as an alternative

cold buffet idea
salmon terrine
poached salmon
roast chicken platter
meat platter
finger sandwiches
side salad selection
warm new potatoes

would it be a good idea to somehow combine the two? especially as it will be a self-catered wedding. how would i go about this - i want it to be a hassel free as possible. all of these dishes will be bought pre-prepared too which makes things a bit easier

cold buffet is better, in variety and health wise
people should not attend yo wedding starving

Maybe you should go with some light appetizers with drinks and then the cold buffet. Everybody is going to want to mingle a bit and if you give them some appetizers with their drinks, they won't drink as much. Most of the people will be really hungry when they arrive at the reception too. The cold buffet add more of a selection. Congratulations!
 
I personally think you should just put them all out at the same time and be done with it. I know if I ate the hot buffet first, I wouldn't have room for the cold buffet later. Plus, I'm just more of a finger food person at wedding receptions, so I'm drooling over your cold buffet menu.

an hour before your supper and drinks, have your cold hor a durves (this will give guests oppurtunity to congergate and visit) than have your main supper....GOOD LUCK>> This will make it a very relaxing non rushing atmospere
