Unlocked phones with at&t?

i am on a family plan, and i have a phone of course, but the screen is cracked badly, and it is beginning to mess up. so i was considering buying a new phone. i am new on the whole unlocked cell phones thing and was just wondering, if i am on a plan like that, and stick my sim card into an unlocked phone, how does all that work? thanks.
