Underage questions, need help with being polite to judge and officer & more?

I received an underage for Washington county pa courts. I was in a vehicle with 3 others who were drinking, 2 of them has open containers, and the driver took a breathalyser. I did not take a breathalyser, and had no containers or any evidence to lead to my guilt what so ever. I sent in my not guilty plea today, along with a letter asking politely if i could have a hearing on a Tuesday or Thursday because I have college classes on the other days.

First question, how do I go about fighting this in court politely and the correct way?
I do not want to be rude, or seem like im questioning the cops authority, but the lack of evidence has lead me to plea not guilty. Im friends with the chief of police in my town, and he and my principal from high school both advised me to plea not guilty, for lack of evidence.
I would like to fight my case, but I want to know how I should go about this in court, any advice?

Also is it rude or nonprofessional of me to send in the letter with my plea?

I'm 18 years old also, if this helps. I know i look like a moron (being 18) and going against a state trooper, but the lack of evidence is undeniable.
