UC Merced/SAT Subject Test?

I'm an upcoming senior in a highly ranked California school. My grades, and academic information are located below, and truly the definition of mediocre or average

GPA - 2.88
SAT - 1600

I have countless hours of community service including traveling to other countries helping in shelters and poverty stricken neighborhoods. Play on my high school football team, and have held down a job with other various activities I've been a leader in.

I plan on taking the ACT in September and the SAT in October, which leaves me with the question, should I take the SAT Subject Test when I know they're only required for a UC? Do I have a shot at a UC? I calculated if I were to get a 3.6 in my senior year first semester, my overall college GPA would be a cumulative 3.0 GPA, which isn't THAT bad.

Anyways, do I have a chance at a UC, and should I take the SAT Subject? Or should I just pass and apply to only CSU's? P.S. I'm not looking to get into the elite UC's (LA, Davis, Berkley, etc.), but moreso Riverside, and a school very near my home in UC Merced.
