Type2 Diabetic - Progress 12/12/2010?

It has been 5 weeks since I realized during a doctor visit that Im a type2 diabetic. Made the below lifestyle changes. A1C =10, Blood Sugar level of 280 after meals. Age 40 years old.

1. No sugar, replaced with Splenda.
2. No Rice, Potatoes strictly.
3. Started having breakfast regularly.
4. Breakfast - 2 organic apple Cinnamon sausages, medium size, 4 egg whites, 1 Dannon Active yogurt, 1 to 2 cups tea with creamer.
5. Lunch mostly has been Chicken Salad.
6. Dinner has been mostly chicken or lamb, salad, cucumbers, plain yogurt.
7.Excercising regularly every alternate day. 40 minutes brisk walk or work out with trainer at the gym.
8. Checking blood sugar at least 6 to 8 times in a day using one touch ultra2.
9. Taking atleast 6000 ml of water per day.


After 5 weeks, the below are the results:

1. Average of all the readings over the last 5 weeks has been between 140 and 150.
2. After meal average is the same between 140 and 150.
3. But my main concern is the fasting blood sugar level tken early in the morning has been fluctuating wild between 102 and 130. Need help and advise in this area.
4. The lowest reading recorded in the last 5 weeks has been 98.
5.Taking Cinnamon tea works great, and reduces the blood sugar level quite fast.


Concerns:

1. Struggling to decide as to what is the best way to add carbs to diet.
2. How many carbs are needed per day actually?
3. How to reduce the early morning fasting reading?
4. Can exercise also lead to increase in blood sugar levels?
5. Is drinking whole milk o.k. ? if Yes, how much ?
6. My urine color is yellow on a consistent basis, is that o.k.? The sweet smell in the urine though has reduced over the last 5 weeks.
7.My height is 6 ft, and my weight has come down from 205 pounds to 178 pounds in the last 3 years. Dieting and excercise might decrease it further. Some confusion here in my mind. What is the weight I should aim to maintain?

Note that until now I have not taken any medications. Im backing myself to get hold and manage and improve my situation via diet and exercise.

On the positive side, I dont remember working on my fitness so much, in the last 15 years.

Please share your advise and opinions.
