Two photography questions...?

I have two questions concerning taking pictures in cool ways:

1: How can I isolate one subject (a person, building, object, pet etc) and have everything blurry or unfocused? I've seen it done in many pictures and I'd really like to know how to do it. By the way I have a FujiFilm FinePix Z33 WP if that helps.

2: This is more of a digital altering of a picture but how can I, once again, isolate an object in a picture and make it a different color than what it is while having the rest of the picture in black and white? When I've tried to do this in Photoshop, but since I don't know the proper technique, it always looks like I clearly painted over it and I lose the details and definition of the object I'm trying to color instead of it looking real.
These are 2 very common techniques that I see a lot but I don't know how to do. I love taking pictures and I would love to know how to accoplish them. Thank you!!
In question 1 I meant how do I make everything else in the background blurry and unfocused.
