trainee/pre employee vs trainor?

is it proper to complain on your trainor during your training process??or tell it otherwise to your human resource department? because you might thinking it would awkward to say it directly to your trainor?is it ok if you just write it down all your thoughts and give it to your HR during your exit interviews?? what are the questions anyway during your exit interview if you decide to resign?
