I'm 6'4" and about 216-230 depending if I'm on salads and it's summer . I found the 1098S amazingly comfortable for a no BS sport bike. I would strongly recommend you test ride one and realize even a test ride will not give you an idea of how you will feel after riding a half day or all day in the saddle (or lack thereof). Odds are, if you are totally miserable on the bike after a short test ride, longer rides are surely not going to be more comfortable. I know you said the local dealer won't demo a bike but this is B.S. It is good to support your local dealer, BUT! There certainly are many dealers who would be more than willing to have you test ride a bike and should you decide you want one, can more than likely assist in the sale.
I would strongly recommend if yoo do fall in love and buy the bike, you ride it for at least 600 miles or 1000 miles before altering the ergo's (bar height, rearsets etc.). You may find that you adjust to the bike and riding posture and as you learn to lean in the correct position, your grip lightens, your tank hugging increases etc etc. The stock ergos are not to bad for a taller rider, or at least they weren't for me.
