Take Employer to Court with Just E-Mails?

I've been doing "under-the-table" work for a company outside of my city (about 6 hours away). The agreement both verbally in-person and in e-mails stated that I am to be paid a fixed sum of X dollars every two weeks on a Thursday.

This has been going all well for about a month now... but this month, he held back/is late on paying me for a month now... I have countless e-mails from not only him, but his sales and co-ordinator saying "pay will be today, I promise", over and over again... he tells me he don't have the money to pay me for a month now, its excusses upon excusses, phone calls after phone calls... I'm sick of it.

I have about over 30 E-Mail from his company stating they'd promise to pay me "today" and never do, and about 10-20 E-Mails about the payment agreement/schedule.

Just curious, or anyones experience... If I sue for the money owed as small claims... will the E-Mails hold up in court?
