Switching from Comcast to Verizon FiOS?

I live in an apartment with my cousin as the landlady in the apartment above me, and we split the bill on the internet and cable every month as it works for the whole house. She's considering switching from Comcast, which we have now, to FiOS. I've been trying to read up on what I'll gain/lose between the two, but everything I find is confusing and isn't really telling me straight up.

I was at my Aunt's house last night, who had also recently switched, and she had gotten the Extreme package, which has a lot of channels we don't have now but did when we had DirectTV - Discovery, science channels, history channels, FUNimation channel, Nicktoons network, etc. We don't know the difference between the two price-wise, or if there are channels you lose in that package or if it just adds on extras to the basic package. Also, the difference between On-Demand and DVR, as my mom quite likes On-Demand and doesn't know if she wants to readjust to something new.

Basically all I want to know is the answers to these questions, because what I find when I Google it is mostly focused on speed and price and blah blah blah...but what do I GAIN and what do I LOSE from the setup I have now? I'd really like the channels in that Extreme package specifically, but is it a lot more expensive than the basic one? Are there channels that basic has (such as ones I'd have now on Comcast) that Extreme would LACK? Can anyone give me a more specific rundown of these sorts of changes so we can make a decision? We're going to be getting FiOS for internet no matter what, but we're not sure if we want to do it for TV as well, and if we do...makes more sense to have them both installed on the same day, right?

Any help would be appreciated.
