stance setback on Rossignol storm for beginner snowboard rider?

I purchased a Rossignol Storm because the guy at the shop said it was good for someone learning that wanted something to grow into, and was good for all kinds of snow and riding.
I'm new, rented all last year and don't know much about the equipment.

Trying to install my bindings now, and reading that I should have a centered setback or maybe a little toward the tail.

When I look at the install holes / screw holes - they are all setback 2"! Everything I read shows that this is a board made more for powder riding.

I live in the mideast, there isn't powder lol. I learned to board on a solid slab of ice covered in balls of ice, and pretty much that's about all we ever see except for the occasional snowstorm.

I'm older and heavier, and won't be hitting any parks anytime soon. Just want to carve left and right down the hills and eventually hit some jumps.

Should I try to find the center on this board and just mount it as such, even though there will be more screw holes on one side than the other left 'open'? I do believe this board is a one direction board if that helps.
