I think what they're referring to is the fact that many young people, while in boot camp, change their rate (or MOS) from whatever they initially chose to one that is infantry-based. It likely has to do with the "oo-rah" attitude found in the boot camp experience. It's very easy to get caught up in the momentum and patriotism you'll find at boot camp, some young people make the choice to change their assignment, based on those feelings. The feelings themselves are an integral part of boot camp, and I wouldn't at all discourage those, but it's also important to keep a level head about the job you've chosen, the career path (school path) you've chosen... and not let the feelings you'll experience while in boot camp to influence what job you'll be doing for the next few years.
The pro's of boot camp and A-school are that you'll be taught what it means to be in the Navy, the chain of command, military etiquette, and you'll really form a strong bond with the other recruits going through boot camp. Some will be life-long friends, because of the experiences you'll go through in boot camp. A-school will teach you the mechanics of the job you've chosen.
