Small Town Buffet Costs?

O.K. (Before I start, please no negative comments. I'm wanting knowledgeable information or good places to look for answers to my questions. I am researching all that I'm asking, and not going into this blindly, just thought posting this here and getting real peoples educated responses will help me out a lot)

My town has a population of 4300, there are currently 5 Restaurants: A Chinese Buffet, a Mexican Restaurant, A McDonald's, a Sonic, and a family restaurant. McDonald's, which is currently taking the majority of the customers, is closing down for 3 months+ soon, and the family restaurant is relocating to a nearby town. This would be a wonderful time to start a restaurant.

I am going to be renting the place where the Buffet will be held, and almost everything I need will already be there. My question is, what are all the costs I may have, or ones that I may have not yet realized. physical numbers and explanations behind them would be best. How much will a business license cost me? Where should I buy my food, i'm not sure if I will have enough business to buy from a company, but I can make deals with local meat places, or Shop at Sam's or something...like I said, I am still doing my research.

My Buffet will have a Southern Theme, i think that's what will work best in my area...I've got a couple good recipes that should go well. Cooking is my passion, and Owning a Restaurant is my dream.

Any Ideas, Suggestions, and helpful advice would be greatly appreciated, but like I said, please refrain from negative comments, or saying that this will most likely fail. I want info to keep that from happening.

Oh, as for like rent and stuff, Rental Houses around here go from 250-400, mostly in the 300s as far as I know, not sure if this will help gauge what I'll be paying for the building, but ill put it out there anyway.
