lamb is like pork the slower you cook it the more tender it is. I wouldn't suggest water that makes the meat tougher. however if you are making it into a stew when it is almost ( 1 hour) put your veggies and enough water to cover veggies. If you are not you can season it in which ever way you want like sweet& sour, bbq, herb& garlic and cook as usual with seasoning, though it does crust your slow cook a bit almost burnt on the inside of cooker, but totally worth it. hope this helps.
