Should my allergist have told me about the risk of developing new allergies...

...that are associated with immunotherapy [allergy shots]?

I developed an allergy to scallops which causes laryngeal edema (my throat constricts painfully and makes it very hard to breath) when I ingested them during a low-grade local (itching and pain at the site of the injection) reaction to my weekly allergy shots to counter dust mite allergies.

I wasn't told before beginning the course of shots or at any point thereafter that the allergenic protein tropomyocin is highly conserved between dust mites, roaches and shellfish (meaning that the chemical structure is nearly identical with some changes here and there between all of those species) and that exposure to high levels of dust mite tropomyocine might induce cross allergenic reactions to other kinRAB of tropopmyocin (in my case, that produced by scallops).

Had I known that I would have been very reluctant to get shots in the first place and if I had decided to, knowing the risk, I would have made damned sure to avoid shellfish while having a reaction.
