Science and the scientific method...?

I often read statements by atheists and adherers to the theory of evolution that science has proven that God does not exist. I was pondering that the other day, and even though I personally see plenty of evidence for God and intelligent design in our world and universe, the thought occurred to me... Let's say for the sake of argument that neither I nor anyone else was able to find evidence for God's existence or His hand in creation through scientific methods. Why is it that science and the scientific method have been elevated to the point where if something doesn't pass that particular 'scientific' litmus test, it therefore cannot exist?
For instance, what if we were unable to manufacture any instruments that detected the earth's magnetic field; wouldn't it be intellectually dishonest and shortsighted to categorically state it Did Not exist?

Therefore, isn't it at least intellectually honest and fair to admit that God or spiritual matters may exist, even though scientific instruments or the scientific method fails to detect Him?

I hope you understand what I'm asking.
