I am pretty experienced in both, as I have 92 fishing, and 75 hunter.
The answer is honestly, don't do sharks. AT ANY LEVEL. at any fishing level, you can actually make more money fishing monkfish than sharks.
I'm not completely positive on the chinchompas, but I hear they are good money.
I would go with chinchompas.
