Risks of Jail-breaking an iPod Touch 3rd Gen?

I am getting the new iPod Touch within a few days. I know that there is no jail-break for the new iPod Touch Software 3.1 yet. I've heard that if your touch has a problem, Apple will not fix it because of it being "hacked". I know this is true, but is it also true that you can restore your iPod into its original form if ever in need to send it in for repair? I am paying $450 for this device and want to be 100% sure that it is absolutely restorable after jail-breaking, and after technical failures.

Also, since I'm new to this device, are there any recommended or "must have" apps? Free/Paid.
I am mostly using this for school and social networking. It's 64g, so feel free to name as many as you like. Games are okay too.
And one last question, I don't have an Airport, so can this device connect to routers? If so, is it for all routers or some in particular?

Also, if they do detect if you have jail broken it, would you be charged?
