Restriction enzymes are purified from bacteria. The bacteria use them as part of their self-defense system; to cut up and therefore destroy the genetic material of viruses that might try to invade and take over the bacteria. We purify them from bacteria and use them in genetic analysis to cut DNA at specific sites.
