Restoring old bikes, is it worth it?

I L-O-V-E restoring old bikes. But the question I have is is it worth doing? I essentially want to replace chain, wheelset, crankset, saddle, and regrease bottombracket and headset... on the cheap side, all of the new components would be about $200-$250... I'm not planning on making a profit on these bikes. We're talking old run of the mill frames i.e. Steyr Clubman, Schwinn World Sport, Beacon, etc. so they're not "rare". I'd sell the bikes for what the parts are worth but would people, in your opinion, pay that much for an old steel tank of a bike(They're all going to be singlespeeds too)? If you have any experience selling vintage bikes I'd be very grateful. Thanks all!
 
It really depends if people want to pay that. i would give it a full service ( if your doing it ) and then put the new parts what it needs e.g brake cable, pads then sell it if you want as ( refurbished, full service, keep the receipts ) and put a Reserve of 5-20% more
