restaurant: how do they target their audience?

i know this is a kind of crazy but my business teacher is makeing us come up with our own restaurant and we have to target our audience. how would i do that?

I live in Texas and have opened restaurants. What you what to do is a market study.
What restaurants are in the area? what is messing? example: you wanted to open a tea room- are there any in your area? if so, do they cater to just adults? of not, are you in a young neighborhood with up coming couples with kids....so you have done you study and there are no high tea rooms in your area and lot of up and coming couples with kids..so there's your idea...mom and me high tea....you would have a Fresh new CONCEPT for you area and no competition...hope this helps....happy thoughts
 
The answers you have received are good ones. I am just adding, you need to determine your target audience by the food it will be selling and the cost of that food. Who will you cater to? Teens? Adults? Seniors? Who can afford to buy your foods? Will you serve specialty foods like Mexican, Chinese, or will you have a fast food type of business? And, are there any other restaurants in the immediate area that sell what you will sell? Questions along these lines should help you figure it all out.

Greek People who like Mediterranean food
Upscale New wave
Fast Food Brugers, fried chicken
Vegetarian Veggies and noodles
Seafood
Mexican Spicy
Bar b Que
Deli Sandwiches
 
Identify who would be the most likely groupings of people to eat at your restaurant and then

advertise in the medias that would reach those
groupings
