replacing Serpentine belt on 95 pontiac sunfire?

On some cars you have to disconnect the motor mount at the front of the engine, because the belt goes around the mount. If so, use a floor jack with a nice wide flat piece of wood under the oil pan to support the engine, with a little bit of tension on the jack. If the belt is off to the side of the mount, (depends on the engine) that shouldn't be needed. As far as the wrench not turning very far, try pulling the belt off of the Alternator first, before the tensioner pulley. The Alternator pulley is much smaller, and you don't need to move the tensioner as far then. If it's the kind of tensioner that uses a 1/2 inch drive square hole, try using a ratchet instead of a breaker bar.
 
Do you have to remove the passenger side motor mount in order to move the tensiorner enough to be able to put the belt back on? I get my wrench on the bolt and I can only get the tensior to move a little before the hoses get in the way.
 
There should be a 1/2 inch square hole in the tensioner bracket.
Use a 1/2 inch drive ratchet and a 2 inch extention. The extension end fits into the square hole. The two inch length should clear the belt and hoses.Pull on the ratchet to take the tension off the belt and then slip the belf off any of the pulleys.
