Recording multiple channels on VCR with digital tv?

I record a lot of tv (while I m at work to watch later). Currently no problem - my VCR allows me to set up to 8 programs on different channels. But my cable bill is over $55 for regular cable. They advertised digital specials from 25 - 39 a month. But when the guy came to install, he told me I had to set the TV to channel 3 AND the VCR to 3 - and I had to make the recording setting say channel 3 even if I wanted 7 or 9. But I had to leave the cable box set to the ONE(!!) channel and I could only tape the one channel (unless I were home to change the cable box - but DUUUHH if I were home I probably wouldn't be recording.) So my days of 4 shows on 4 channels -at different times would be over.

Does digital (direct) or satellite work better? Do I have Any options ? (I still have 4 VCRs and like to take my tapes when I travel between cities)
Since I have been a computer scientist for over 25 years this seems assine to me. (like tv's pre-remotes)
