Recommend a bike for a beginner?

Hi!

I am really interested in getting a motorcyle. I have no experience riding, but plan on taking the MSF courses and any other learning courses to help me learn to ride.

I have been looking all over for good beginner bikes. I'm not interested in touring bikes or extremely loud harley davidsons. Hopefully some of you experienced riders can pass along a few suggestions as I venture into this new experience!

Here are some of the attributes I'd like my first bike to have:
- Able to seat me well...I'm 6'2"
- Quiet (I'm' not a fan of waking up the neighborhood as I ride home, a loud bike is a turn off for me)
- Able to travel at highway speeds around 75 mph

So far I've been looking at the Buell Blast and the Kawasaki Ninja 250. I love the way both of these bikes look. The only issues I might have with these are the Blast has a harley motor in it, and it seems like quite a thumper. Is there any way to reduce the noise significantly? After market exhaust? And my height seems like it may present a challange on the Ninja 250, which seems to have a really low ride.
