Wayne?s Tijuana Frittata
5 eggs
1 c refried beans
1 tsp. taco seasoning
1 c ground meat
? c diced onions
11/2c pepper jack cheese grated
? c salsa
1 avocado
Brown and season the meat, caramelize the onion in oil or butter.
Layer beans, meat and onions in a non-stick skillet. Beat eggs and pour
over layers, scatter grated cheese on top, place avocado slices on top,
add salsa. Cook covered until set.
