Rec: Swiss toast

My brother and I visited a farm family in Holtville California last
September. The lady of the house made Swiss toast for breakfast. We
had never had this before and it was wonderful. I ate it plain, her
daughter put jam on it and a neighbor used syrup on his. When I got
home, I made it for Dee and she has requested it once a month since then.

Swiss Toast

3 c Swiss cheese grated (or a mixture of sharp cheddar & Swiss)
1/3 c Parmesan cheese shredded
1 egg beaten
1/4 c flour
1/4 c milk
1 tsp. baking powder
4 t0 6 slices bread of your choice (sour dough is good)
butter

Mix all ingredients except butter and bread. Butter one side of bread
only.
Spread mixture on un-buttered side of bread about 1/4 in. thick.
Mixture should
not be too wet but should stick together. Place toast cheese side down
in well
buttered griddle or fry pan. Brown well and turn over to brown buttered
side.
