Rebuilding 350 for Chevy Truck?

Ok so Im 16, Ive rebuilt engines before and go to school for automotive. But I dont know what good applications are and different tips that youde learn going along. I have 87 Chevy 1/2 ton 350 auto, 6 inch lift, 37 in tires, 140k miles on it. Im rebuilding it right now, beds, off, ect. Now I want to go at the motor. I was on summit looking at rotating kits for like 650 bucks. Then all the parts for top end. Should I rebuild it all? Should I go for a new crank and pistions and the hole deal? Or just put new top end with cam, and bearings and gaskets and pistons? Im not sure how deep to go. I want to make more power then the truck had while making the 140k miled engine like new and keeping decent fuel economy. Just answer and if you have questions ill keep coming back to edit. Theres just so much to go into. I have aim also if your interested in talkin about it. I appreciate any help, thanks.
