This is the winning recipe in the Ramen national cooking contest. Don't
laugh...it sounds marvelous..and, you throw away the nasty seasoning
packets.

Cook 2 (3 oz.) packs ramen noodles in 2 cups water, not the 4 cups
called for. Discard seasoning packets. Drain, reserve cooking water. Put
noodles in large bowl.

Heat 1 T. veg oil in wok or large skillet over high heat; add 1 t.
crushed red pepper and 2 large minced garlic cloves. When garlic starts
to brown, add 1 cup shredded cabbage ( I would use Napa ), 1 cup thinly
sliced mushrooms, 1 cup chopped broccoli. Stir fry till softens and
starts to brown on the sides.. Combine with noodles, set aside.

In same wok/skillet, combine 1 T. peanut butter,1 T. soy sauce, 1 T.
brown sugar, 1 cup coconut milk, 1 t. curry powder, 1 t. sambal oelek
(or any Asian hot sauce). 1/2 t. salt. Bring to boil. Add noodles and
vegetables; toss well and turn off heat.
Add 1/4 cup reserved cooking water and stir, adding reserved water till
reaching desired consistency. Add juice of 1 lime; toss, let rest 5
minutes. Sprinkle with crushed peanuts and chopped cilantro. Garnish
with lime wedges. Serves 4.

(Note...add any vegetable you wish. To make spicier, add chopped hot
chiles to the crushed red pepper and garlic.)
