Yesterday, I was preparing to make soup and discovered
I only had half the amount of barley I needed. I thought
I had a couple more bags, but apparently not. So, I
considered what else I could use. I considered rice,
but I don't like rice in soup. I thought I had some
wild rice, which takes a long time to cook like barley,
but I used it all up a long time ago. Then, I saw the
red quinoa and thought heck, give it a try.
It was great! I just had another pot today, and it was
great too. About 50/50 barley to quinoa works just fine.
Much better than barley alone. It really improves the
texture.
Other ingredients were chicken broth, slices of fried
chicken sausages, broccoli, a habanero pepper, and water.
