Question about serving job at fine dining steakhouse?

I am new to serving, I've been at my current upscale restaurant about 2 months. I'm late 20's. I walked in to this fine dining steakhouse that's one of the highest rated in my city in corporate wear. I was pulled into a room with the GM, she was very helpful and is willing to give me a chance.

She gave me a lesson on how to properly present and pour wine from a new bottle and I demonstrated it for her. Then she told me to keep the wine key and practice at home and also gave me the food/wine menu. I'm supposed to go back next week where I'll be tested on my knowledge of all things steak-like.

So how can I better prepare for this? She said she doesn't normally do this, but wants to give me a shot. I was thinking of going into a fine dining restaurant to watch the servers? I'm nervous and I want to succeed and be an amazing server. Thanks!
Thank you for the response, that was very helpful! You've given me some things to think about, like being there without being too visible.
