Just A Guy Named Joel

I just wanted to say before I start that this question is definitely on the long side and actually poses multiple questions in lieu of just one, but I just wanted to thank those in advance who take take the time to read and answer my questions in spite of that fact.
I'm a 29 year old guy who is 6' tall and 151 pounds. I'm definitely a bit thinner than I want to be and have actually been closer to 170 throughout the majority of the last decade. I'm a small framed guy though and it just seems as though I gain weight in the wrong places; primarily in my stomach, so when I was about 170 I had a bit of a gut even though I was certainly not at a heavy weight and thin everywhere else, which I was very self conscious about.
I started dieting though and really ate mostly Subway sandwiches that were on their Fresh Fit menu, so I guess I took the Jared approach without intentionally doing so, and I did lose a good deal of weight, which is how I'm at the 151 I'm at to at least some extent. It wasn't Subway alone, however, that got me here. After a while, I stopped eating Subway and started eating Weight Watchers Smart Ones frozen dinners exclusively with a small snack throughout the day.
When I saw that I was only 151 at my doctors office for the first time a few weeks ago though, I felt like I went too far, yet I still have a slight gut, although my family has told me my gut is gone. (They were honest enough to tell me that I had one in the first place, so I think they might be being truthful) Question now is: What can I do to get rid of the gut that I still have (in my opinion)?
Why is it that even when I'm at such a low weight, I still have a small gut? I had thought it had to do with the fact that even though I'm not taking in a great deal of calories, that perhaps the food I do eat is comprised of too much fat and that's why I still retain a small gut even at a low weight.
My secondary question is a silly one in that it has to do with pumpkin pie. I love pumpkin pie; it's the one food I have low impulse control with, so I tend to eat way too much of it, way too fast. It's rarely available, but when I see a pumpkin pie I tend to impulsively buy one.
I recently bought a 22 ounce pumpkin pie from my supermarket. How many days do you think a pie that size would last one guy my age on average?
These days since my weight is lower than what I want it to be, I switched to the Stouffer's frozen dinners. (I have no ability to cook whatsoever) I eat two of their meals a day; primarily the roasted turkey meal with stuffing (tastes great by the way) , which is about 430 calories and 140 calories from fat and their meatloaf dinner, which is 530 calories; 230 calories from fat. So, I eat a total of around 960 calories a day. I only drink water, which contains no calories of course, and since I'm a guy, I thought I needed at least 2000 calories per day, so I throw in some pumpkin pie or another snack to get the caloric intake up a bit, but I think I'm still getting less than 2000 calories a day, so I'm assuming I'll continue to lose weight if my eating habits stay the same. Am I correct?
I know there is an equation one can use to decipher what their correct total caloric intake should be. At age 29, 6' tall, and 151, what should I actually be taking in in terms of calories?
Final question and I know there were many, If you have no ability to cook like myself, what do you think is the best way to eat? Is Subway the better of all evils, or is there another method I'm missing that would serve me better?
Thank you again for taking the time to read and answer the many questions I posed, I appreciate it.
