Question about jumping position in the olden days?

So the other day I watched the film 'National Velvet' and I noticed that the girl in it doesn't actually fold, she sits there and gets super left behind? I don't mean that as a criticism- she's clearly an amazing rider! But I just wondered why. For anyone who hasn't seen the film, skip to 1:57 in this video http://www.youtube.com/watch?v=Tm7QeWBK6ec

Why is that, wasn't there an official 'right way' to ride in those days? The film was made in 1944 btw, and as far as I could tell Elizabeth Taylor did all her own stunts! Also, when did riding hats come into popular use in the UK?
